I have been sweeping only a few months.  When sweeps ask for you to check a box to send you emails and newsletters and information about their products, if you don't check the box, will it count against your entry?  In other words, if that entry gets chosen and they see that you really don't want email about their product, will they throw it back into the pot and choose another one?

No, believe that would be against the law and at the very least highly unethical. Most legitimate companies would never think about doing that. Some sweeps require that you sign up for emails, and some explicitly state that just by entering you are signing up for emails. Those that give you an option to opt out put that there because they realize that not everyone wants to be spammed by emails.
